Homemade Granola Bars

Some of my best creations come from using the ingredients I already have in my pantry. So, last night I went on a pantry cleaning spree and came up with this idea for homemade granola bars, using just 7 ingredients. Turned out to be one of my best ideas ever! These granola bars are crunchy, delicious, the right balance of sweet and salty, and are loaded with protein and fiber – the perfection combination.


Since I used what I already had, this recipe can easily be modified to fit what you have in your kitchen. For example, I used dates in mine, but any type of dried fruit would be a good addition. And I bet nuts would make this recipe even better!


The key to making sure your granola bars stick together is letting them cool completely and then chilling them in the fridge for at least an hour. Once chilled I cut them into bars and wrapped each bar in plastic wrap, to make them an easy grab-and-go snack.

I wouldn’t wait to make these, you guys – they are just so freaking good!


1 cup steel-cut oats
1/2 cup quick oats
1 tsp chia seeds (optional)
1 Tbsp flax seed (optional)
1/2 cup natural peanut butter
1/3 cup honey
1 palmful dates, chopped
Any other add-ins you have laying around (chocolate chips, nuts, dried fruit, etc.)


Preheat oven to 350 degrees F.

Combine all ingredients in a large bowl and mix well. Spray a glass baking dish (8×8 works well) with cooking spray, then spread the oat mixture evenly in the dish using a spatula or the back of a spoon. Press it down well so it is packed tight.

Bake for 17-20 minutes, until the edges start to turn golden brown, then let cool completely. Chill in the refrigerator for at least an hour before cutting into squares or bars. Store in refrigerator.

Makes 10-12 bars.
